Today I'm here with a recipe that is inspired by a little coffee shop in my area that I go to work at sometimes.
A few weeks ago a pal I meet there on occasion text me asking "what do you think is in those power balls at the coffee shop we go to".
& my brain was like....ding ding ding.
Recipe development time!
& I have to say, I nailed it.
My personal favorite way to enjoy them is to take a bite of strawberry and a bite of the pb ball.
It's like a healthy PB&J concoction.
The perfect pre or post workout snack.
Or just snack in general.
They are also great coated or dipped in chocolate as a sweet treat. Divine!
I mean, come on....

INGREDIENTS
3 cups minute oats
1 heaping cup of natural runny peanut butter
1/2 cup honey
1/2 teaspoon salt, only if your pb is not already salted
1/2 teaspoon cinnamon
2 tablespoons chia seeds
melted chocolate, optional
DIRECTIONS
In a large mixing bowl, combine the peanut butter, honey, salt, cinnamon and chia seeds. Mix thoroughly.
Add in the oats and mix until fully combined.
Using a cookie scoop, scoop out the "dough" and shape with your hands. Coat in chocolate if you wish.
Refrigerate and enjoy!
NOTES
If you want to coat some in chocolate, I melt about 2 ounces of chocolate with a teaspoon of coconut oil in the microwave on 15 second intervals. Dip the oat ball into the chocolate and set on parchment paper.
Runny peanut butter is essential in this recipe. No Jif. Get a natural one. I like Crazy Richards and it is available at Walmart.
Serving with strawberries is an excellent idea. The combo of PB and berries is just delightful.
