Today we are throwing it back to my plant based days and the sandwich I enjoyed regularly.

I was fully plant based for almost two years as I worked on healing my body from a long list of chronic illnesses. HERE is my healing journey if you're interested in taking a look back.
This is a recipe that I prepped almost weekly to have in the fridge for a quick and satiating meal.
I would bulk prep the carrots, cucumber, hummus and sun-dried tomato spread for easy assembly.
It was also great for on-the-go meals.

I know what you're thinking, "who wants a veggie sandwich".
But seriously, this guy rocks. The pesto spread really seals the deal here.
& if you want some protein, adding a thinly seared chicken breast would be divine.
I highly recommend you try it both ways!

INGREDIENTS
*for one sandwich
2 slices sourdough bread
1 tablespoon hummus
1 tablespoon sun-dried tomato pesto
1/2 large carrot, grated
1/4 cucumber, sliced
1/4 cup sprouts
2 leafs of lettuce
DIRECTIONS
Pre prep the hummus and sun-dried tomato pesto spread.
Peel and grate the carrots and slice the cucumber.
Spread hummus on one piece of bread and the sun-dried tomato pesto spread on the other piece. Add carrots, sprouts, cucumber and lettuce.
Combine the sandwich and slice to enjoy!
NOTES
You're not just prepping the hummus and sun-dried tomato pesto for the sandwich, they can both be used for so many other things.
Prepping the carrots and cucumber in a glass jar makes it so easy for easy meal assembly.
If you want to add some protein, a thinly sliced pan seared chicken breast accompanies these flavors well.
Adding a helping of basil pesto never hurt anybody either.
