CHOCOLATE CHIP GRANOLA BARS

Today I am sharing a recipe with you.
My HOMEMADE CHOCOLATE CHIP GRANOLA BARS
Man did I used to devour those Quaker Chewy granola bars in high school.
Quick, easy food that wasn't very nutrient dense and just spiked my sugar making me crash an hour later; wanting another and then repeating the cycle. Ooof.
I don't eat stuff like this much anymore (savory over sweet kind of girl) but every once an awhile a hankering for something nostolgic floods in and I have to find a way ro recrate it. Keith actually has the sweet tooth in our house. But, he's off grains currently so these were all mine. Which means I know these freeze really well. 😉
I also added some collagen to help stablilize that blood sugar spike a bit more.

INGREDIENTS
1 cup natural, runny peanut butter
1/2 cup honey
1 teaspoon vanilla
1/2 cup collagen
3 cups oats
sprinkle of cinnamon
pinch of salt
Hu Kitchen chocolate chips - desired amount!
DIRECTIONS
Preheat oven to 350°F and line an 8x8 pan with parchment paper
Combine peanut butter, honey and vanilla in a large mixing bowl. Mix. Stir in collagen.
Add oats, cinnamon and salt and chocolate chips. Mix
Pour mixture into lined baking pan and spread evenly. Press down firmly with a glass or measuring cup.
Bake for 15-17 minutes.
Let cool, slice and enjoy!
NOTES
These keep well in the freezer if you just want to take a few out at a time.
Make sure you are using a natural, runny peanut butter.
