Hope this post finds you feeling happy and healthy.
If you are part of the foodie scene on any social media platform, I don't doubt you've seen this recipe making its way through the inter-webs.
It is not mine. & I don't even know who to give the credit to becuase it is everywhere!
Keith was diagnosed with Hashimotos in September of 2023. We have been dedicated to healing him hoslitically, which meant saying goodbye to gluten - he has a severe intolerance.
But...one of his favorite things in the world are cookies and GF flour just isn't the same.
So when I saw this trending, I thought to myself...there is no way.
& I was wrong. There is a way.
I will say, this is the most minimal recipe I have ever posted on here, but one I get asked weekly about after sharing it on my Instagram story a couple months ago.
& it truly tastes like a cookie!
A lot of people like to nuke it for like 5 seconds but we didn't care for it that way.
The cold butter is truly the star of the show making it taste like an actual cookie. You do you, but i've warned you.

PRINTABLE RECIPE FILE
INGREDIENTS
Medjool dates
Unsalted, grass-fed butter (we like Kerrygold - great flavor!)
Malson sea salt
Hu Chocolate baking gems
DIRECTIONS
Slice the medjool date lengthwise and remove the pit.
Add a slab of butter.
Sprinkle with maldon salt.
Top with chocolate chips. Enjoy!
NOTES
The cold butter is the star of the show making it taste like an actual cookie, but if you want, you can nuke it for 5 seconds.
Store in refrigerator.
