BEET, FETA, GREEN APPLE & ALMOND SUMMER SALAD

Beet heavy over here in the garden and finding ways to use them up.

I like to refer to beets as dirt candy.

Why?

Well, because they can taste a little bit like dirt but if you prepare them well and pair them properly they can taste like the sweetest candy. Natures candy.

I enjoy them all but the golden ones are divine. 🤤


Decided to whip up a beet salad for two and quickly realized it would make THEE PERFECT appetizer to your next summer dinner party.


The saltiness from the feta, the crunch from the almonds, the sweetness from the beets and the zip from the green apple paired on a bed of tender kale + a drizzle of balsamic reduction is the perfect combo for a summer celebration.


I mean, come on....look at that.

You will win as a summer hostess with a plate like this.

INGREDIENTS

  • 8 stalks of kale, chopped small

  • pinch of salt

  • 1 teaspoon extra virgin olive oil

  • 2 large beets

  • 1 granny smith apple

  • 1/2 block feta, crumbled

  • 1/4 cup almonds, chopped

  • balsamic reduction, drizzle (i love a fig flavored one)


DIRECTIONS

  1. Boil the beets. Slice them into coins and add them to a steamer tray with about one inch of water. Boil for approximately 15 minutes.

  2. While the beets are boiling prepare your kale, apple, feta and almonds. Wash, dry and chop the kale into very small pieces. Add salt + evoo and massage with hands until tender. Assemble on a serving plate or tray.

  3. Slice your granny smith apple into fine slices, crumble the feta and chop the almonds.

  4. Once the beets are done cooking, assemble your plate and drizzle with the balsamic reduction.

  5. Enjoy!


NOTES

  • The almonds can also be toasted if you want even more depth of flavor.

  • The beets can be served warm, cool or cold. I like it each way.

  • This recipe will make enough for about 4 people. Adjust accordingly.
