BANANA BREAD OATMEAL

Honestly one of the best oatmeal recipes you will try in your lifetime.

This recipe has been in my arsenal for about 4 years now.

In fact, I love making them for friends when they come to visit.

They are always a hit, easy to make and so good for you!

A great way to start your morning.

Um, excuse me.

But doesn't that look delicious!?

Your house will smell like banana bread is baking.



WHAT YOU WILL NEED

  • Small sauce pot

  • Knife

  • Fork

  • Silicon Spatula


FOR INGREDIENTS

  • Steel cut oats - you are welcome to use old fashioned or minute oats. I naturally prefer steel cut. But in this recipe especially, it is important to cook on the stove for a longer period to get that sweet banana bread taste.

  • Banana - one whole banana; half will be smashed and half will be used for the top.

  • Water

  • Coconut milk - I love Thai kitchen brand, organic

  • Vanilla - I of course use my beloved vanilla bean paste from blue cattle truck company

  • Baking soda

  • Salt -love terrasoul Himalayan sea salt

  • Cinnamon - love simply organic brand, optional

  • Maple syrup - Trader Joes or Costco makes a great one for a reasonable price, for topping

  • Walnut or pecans, for topping

  • Peanut butter, for topping

Peel and slice the banana in half. Smash half of the banana using the back of a fork.

In a small saucepan, add oats, water, vanilla, salt, baking soda and cinnamon. Cook on low for ~10 minutes or until the oats have doubled in size and expanded. Make sure to keep a close eye on the pot, stirring frequently. The baking soda in the recipe will really make it bubble and want to overspill. But don't skip it, it is super important for that banana bread flavor. Otherwise it just tastes like banana sweetened oats.

Once the oats have cooked, add 1 heaping tablespoon coconut milk and mix throughout. Simmer for an additional 2-5 minutes.

Transfer to a bowl, top with walnuts, sliced bananas, maple syrup and peanut butter. ENJOY!

  • 1 heaping tablespoon coconut milk

  • 1 teaspoon vanilla bean paste, regular vanilla is fine too

  • 1/4 tsp baking soda

  • Pinch salt

  • 1/2 teaspoon cinnamon, optional

  • Maple syrup, for topping

  • Walnut or pecans ,for topping

  • Peanut butter, for topping


DIRECTIONS

  1. Peel and slice the banana in half. Smash half of the banana using the back of a fork. Chop the walnuts or pecans into bite size pieces.

  2. In a small saucepan over low heat, add oats, water, vanilla, baking soda, salt and cinnamon. Cook on low for 10-15 minutes or until the oats have expanded to at least double in size. Make sure to keep a close eye on the pot. The baking soda will make it really bubble up. Keep stirring so it doesn't overspill.

  3. Once the oats have cooked, add one heaping tablespoon of coconut milk and mix throughout. Simmer for an additional 2-5 minutes.

  4. Transfer to a bowl, top with walnuts or pecans, sliced bananas and maple syrup.

  5. Enjoy!


NOTES

  • You are welcome to use old fashioned or minute oats. I naturally prefer steel cut. But in this recipe especially, it is important to cook on the stove for a longer period of time to get that sweet banana bread taste. Steel cut oats take the longest to cook.

  • Do not skip the baking soda. It is ultra important for that bread taste. Like a baked good. Otherwise it will just taste like banana sweetened oats.

  • Toasting your nuts is another great flavor enhancer.

  • As with all oatmeal recipes, feel free to make more. This is a single serving recipe. It is enough to fill me, but remember we are all different in our caloric needs.
